Hearty Taco Salad Bowl
Ingredients
- 1 lb. Quality Ground Beef
- 1/2 Small onion, chopped
- 2 garlic cloves, minced
- 1 tsp garlic salt (to taste)
- 1 tsp black pepper
- 1 Tbsp Chili powder
- 1 Tbsp Cumin
- 1/2 cup salsa
- 1/2 red onion, diced
- 1 cucumber, diced
- 3 Romaine hearts, chopped
- 1 Avocado, sliced
- 1 cup cherry tomatoes
- 1 14 oz. can black beans, drained and rinsed Omit if Keto
- 1/2 cup Queso Fresco
- 2 Tbsp Cilantro, chopped
- CILANTRO LIME VINAIGRETTE
- 1/4 cup cilantro, chopped
- 1/2 cup olive oil
- Juice of 1 lime
- 2 Tbsp water
- 1 Tbsp Apple cider vinegar
- 2 Tbsp Honey (I use this honey substitute)
- 1/2 tsp Oregano
- Pinch of salt and pepper to taste
Instructions
- Saute onions, and garlic over medium heat. Add meat, and spices, stir till well mixed then add the salsa. Cook meat until totally brown and all salsa has absorbed. Set aside.
- In a small bowl or glass jar with lid, add 1/4 cup cilantro, olive oil, lime, water, apple cider vinegar, honey, oregano, salt and pepper. Stir or shake dressing until completely combined.
- Add chopped Romaine lettuce to a large bowl, start layering each ingredient over the top of the leaves. Avocado, tomatoes, onions, beans, cucumber & cheese. Top with the meat and drizzle with dressing.
