Hearty Meatless Chopped Salad
Ingredients
- 2 Romaine hearts, chopped
- 1/2 Head Cabbage, chopped
- 1/2 Red onion, diced
- 1 cup cherry tomatoes
- 1/2 bunch Cilantro, chopped
- 1/2 cup Olives , mediterranean
- 10 oz. Mozzarella balls
- 1 can Chickpeas (garbanzo beans) Omit if keto
- HERBED LEMON VINAIGRETTE
- 2 Tbsp Extra virgin olive oil
- 2 Tbsp Water
- 3 Tbsp Tahini
- 2 Garlic cloves, minced
- 2 Tbsp lemon juice
- 2 Tbsp White white vinegar
- 1 tsp honey I use this honey substitute
- 1 tsp oregano
- 1 tsp Dried basil
- Salt and Pepper to taste
Instructions
- Chop two hearts of Romaine lettuce and half a head of cabbage into thin slices.
- Place lettuce and cabbage in a large bowl. Top with chopped red onion, cherry tomatoes, chopped cilantro, mediterranean olives, mozarella balls, and chickpeas (garbanzo beans), omit if keto.
- For the dressing: In a bowl or glass container with lid, add oil, water, Tahini, garlic, lemon juice, white wine vinegar, honey, oregano, basil, salt and pepper. Stir until well combined. Pour over salad bowl, and enjoy!
