In 2016, I was told I was prediabetic. I brushed it off at first, thinking I could deal with it later. But eventually, I got tired—tired of the discomfort, the constant dieting, and the feeling that my health was slipping away. That moment of truth led me to a low-carb, sugar-free lifestyle, and it changed everything. I found energy, clarity, and a sense of freedom I didn’t think was possible. If you’re ready for real change, I’m here to show you it’s absolutely within reach.



My Mission
My mission with Low Carb Norma is to reach those of you who may be where I once was, facing a wake-up call with your health and unsure where to turn. I knew I didn’t want diabetes to define my future, but I also wasn’t ready to give up the foods I grew up loving.
Coming from a family that owned an authentic Mexican restaurant, food has always been at the heart of my life. The tortillas, tacos, pizza, chips, and yes, dessert! The idea of letting it all go felt impossible… until I realized I didn’t have to. We don’t need to eliminate foods, we just need to learn how to recreate them.
This blog is proof that you can enjoy the foods you love without sacrificing your health. There’s a low-carb, sugar-free way to live fully, joyfully, and deliciously and I’m here to show you how. My hope is that through these recipes and tips, you’ll break free from the hold carbs and sugar once had on you, and step into a lifestyle that feels sustainable, empowering, and truly satisfying.
