In fact, leftover Asiago and Mozzarella cheese are perfect for so many things. However, these two cheeses are exceptionally good when baked on top of asparagus. • Using your garlic press or chopping old school way, mince your garlic cloves, 2, 3 or however many you prefer… I love me some garlic. Lay your asparagus spears in your casserole dish, cover with garlic and olive oil tossing and coating every spear evenly. At this point, I like to sprinkle some salt and pepper over the top.

Tips to Make the Best Cheesy Asparagus

  • Choose fresh asparagus: The firmer and greener the spears, the better. Thicker spears hold up best in the oven and absorb all that cheesy flavor.
  • Switch up the cheese: Try Parmesan for a nuttier flavor or even cheddar for a more gooey, melty finish. Roasted spears topped with parmesan make a super easy veggie side with a gourmet twist.
  • Add breadcrumbs: For a little crunch, sprinkle low carb breadcrumbs on top before broiling. It adds the perfect texture to balance the soft baked asparagus.
  • Make it spicy: Add a pinch of red pepper flakes or smoked paprika to the olive oil mixture if you like a kick.
