This is a fun spin and my interpretation of the very popular viral pasta California style. I have recreated the original version from Finland that uses Feta cheese and I incorporated Humboldt Fog cheese from Northern California. This is a very soft, easy melting cheese and since I am low carb, I added my favorite Palmini noodles for pasta. If you haven’t tried these yet, you really need to try them. This is my personal take on the viral pasta from Finland with feta cheese. I have turned this viral pasta California style. It is a very delicious simple dish you can make and add your own favorite flavor, easy melting cheese. This recipe uses palmini noodles, but you can use zucchini zoodles or any low carb noodle of your choice.

Ingredients
  

  • 4 oz block of Humboldt Fog cheese or your favorite melting cheese
  • olive oil to drizzle
  • 1/4 C fresh basil leaves
  • 1 box cherry tomatoes
  • 2 servings Pasta alternative, zoodles, shiratake or palmini
  • 2 cloves garlic minced
  • Red pepper flakes, oregano to taste

Instructions
 

  • Preheat oven to 400 degrees.Toss cherry tomatoes in small casserole dish. Drizzle with olive oil and add 2 garlic cloves, mix well.
  • Place cheese in center of dish, and drizzle with more olive oil. Sprinkle with your favorite blend of seasonings. Here I used a red pepper and oregano blend. Salt and pepper if you prefer.
  • Bake in 400 degree oven for 20 minutes. Remove from oven, and stir until all cheese is melted. Add fresh basil and warm noodles. Enjoy!
