Creme Brulee For The Keto Girl
Before I went on a low carb lifestyle, creme brulee was my all time favorite dessert. This is why I am so excited to bring you creme brulee for the keto girl. It is so delicious, rich and creamy. You will never know that it is sugar free, low carb and perfect for the keto girl. Make it for your friends and family like I did, and they will never know the difference.
This recipe calls for the creme brulee to be placed in ramekins, which is the easiest way, but I understand not everyone has ramekins, so you can use any dish, as long as it is oven proof.
The caramelization that occurs on top can be achieved with a kitchen torch, or in my house, my husband ‘s cigar torch thingy? It’s a thing… really. Since most people don’t have a kitchen torch in their kitchens, you can achieve this caramelization by placing the ramekin with freshly sprinkled granular sugar directly under the broiler for a quick minute, or sooner. Be sure to check frequently so it does not burn.

Instructions
- Preheat oven to 325 degrees. Place 4 ramekins in a large casserole dish that will accommodate all four ramekins.
- Bring 3-4 C of water to a boil. After boiling, remove from heat.
- In a small sauce pan, place heavy cream and 1 T of powdered sugar substitute . Bring to a boil them immediately remove. Stirring to cool down off the flame.

- Slowly pour the egg mixture into each ramekin. Now, slowly pour the boiled water in the casserole dish so the ramekins are sitting in the water about an inch deep. Not too high up, you don't want the water to go inside the ramekins. This water is to help the custard cook to a nice soft consistency.
- Gently place casserole dish with ramekins and water in the oven. Bake for 35 minutes until the centers are set and not wiggling.
- Remove the dish from oven, and let ramekins cool. . After cooled, cover and place in refrigerator until ready to eat.
- When ready to eat, sprinkle 1 tsp of granulated sugar substitute on top and place under broiler for a quick minute watching carefully for caramelization and not to burn. A kitchen torch can also be used to achieve the caramelization. Enjoy friends!
