Keto Blueberry Loaf for Mom

This yummy keto blueberry loaf for Mom, creatively named, as this is what I created for my mother-in-law on Mother’s Day. It was the perfect partner to the egg dish I made. This loaf is hard to believe that is is low carb sugar free and keto friendly. Made with erythritol for sweetener and coconut flour with a super tasty lemon glaze on top. Perfect bread for a special occasion.

Ingredients

  • 6 Eggs
  • 9 T butter, melted
  • 3/4 Cup fresh blueberries
  • 1/2 tsp cinnamon
  • 2 T Sour Cream
  • 2/3 C Sugar substitute, granular I use Natures Besti use promocode NORMA10 for discount
  • 1-1/2 tsp Vanilla
  • 2 T Heavy whipping cream
  • 10 T Coconut flour
  • 1/2 tsp salt
  • 1-1/2 tsp baking powder
  • ICING ..
  • 2 T Powdered sugar substitute I use Nature's Besti, use promocode NORMA10 for discount
  • 1 tsp butter, melted
  • 1 T Heavy whipping cream
  • dash vanilla
  • 1/4 tsp lemon zest

Instructions

  • Preheat oven to 350 degrees. Line a bread loaf pan with parchment paper.
  • Beat eggs, sugar, sour cream, heavy cream, vanilla, salt, baking powder and cinnamon until combined.
  • Add in melted butter and beat until combined.
  • Stir in coconut flour until combined.
  • Layer half the batter in loaf pan, sprinkle with half blueberries.
  • Add remaining batter and top with remaining blueberries and gently fold into batter.
  • Bake for 60 minutes or until toothpick placed in center comes on clear.
  • FOR ICING: Combine all ingredients and whisk until smooth. Can add more powdered sugar to desired thickness. Add more lemon zest if desired. Drizzle over warm loaf.
