Anything in my book! These two cheeses are exceptionally good baked on top of asparagus, salt and peppered, add fresh garlic and tossed with olive oil.

Looking for a Thanksgiving or holiday side dish that everyone will love? I just love me some cheesy spears, and this is the dish for your kids and friends who don't even like vegetables. Two yummy flavored cheeses sprinkled with garlic and olive oil. You just can't go wrong here.

Ingredients

  • 1 Bunch Asparagus spears
  • 1/2 C Asiago cheese shredded
  • 1/2 C Mozzarella cheese shredded
  • 2-3 cloves Garlic minced
  • 2-3 T Olive Oil
  • Salt & Pepper to taste

Instructions

  • Preheat oven to 350°°. Rinse asparagus, and dry completely. Trim off ends of asparagus spears to a uniform size, making sure they fit in the casserole dish you will be using to bake them.

  • Using your garlic press or chopping old school way, mince your garlic cloves, 2, 3 or however many you prefer… I love me some garlic. Lay your asparagus spears in your casserole dish, cover with garlic and olive oil tossing and coating every spear evenly. At this point, I like to sprinkle some salt and pepper over the top.

  • Now layer your asiago and mozzarella over the top completely covering your asparagus, and don't be afraid to add more cheese .

  • Bake in 350° oven for 20-25 minutes, and place under broiler for last 5 minutes. You will thank me later!! Enjoy friends.
