Eggs are your friend on keto and living a low carb lifestyle. This all time crustless quiche is a favorite and has even won some awards. So much flavor here, no need for a crust.

Ingredients
- 2 T olive oil
- ½ C Sliced mushrooms
- ¾ C Chopped green pepper
- ¾ C Onion, chopped
- 1 garlic cloved, minced
- 6 eggs, beaten
- ¼ C Half and Half
- 8 oz. Block cream cheese, cut in small chunks
- 1½ C Shredded cheddar
- ¾ tsp Salt
- ¼ tsp Pepper
- ¼ tsp Dry mustard
Instructions
- Heat oven to 350°. Chop your mushrooms, onions and green bell peppers same size.
- Heat oven to 350° Grease a pie dish or spring form pan. Saute mushrooms, peppers, onions and garlic in olive oil till tender. Remove from heat and cool.
- In a bowl, beat eggs with half and half until combined.
- Cut the block of cream cheese up into small chunks.
- Add mushroom mixture and remaining ingredients. Mix together.
- Place in greased dish, bake 350 for 30 minutes. Enjoy !
