Eggs are your friend on keto and living a low carb lifestyle. This all time crustless quiche is a favorite and has even won some awards. So much flavor here, no need for a crust.

- 2 T olive oil
- ½ C Sliced mushrooms
- ¾ C Chopped green pepper
- ¾ C Onion, chopped
- 1 garlic cloved, minced
- 6 eggs, beaten
- ¼ C Half and Half
- 8 oz. Block cream cheese, cut in small chunks
- 1½ C Shredded cheddar
- ¾ tsp Salt
- ¼ tsp Pepper
- ¼ tsp Dry mustard
Heat oven to 350°. Chop your mushrooms, onions and green bell peppers same size.
Heat oven to 350° Grease a pie dish or spring form pan. Saute mushrooms, peppers, onions and garlic in olive oil till tender. Remove from heat and cool.
In a bowl, beat eggs with half and half until combined.
Cut the block of cream cheese up into small chunks.
Add mushroom mixture and remaining ingredients. Mix together.
Place in greased dish, bake 350 for 30 minutes. Enjoy !
