Artichokes For The Cheesy Lover
Where are my stinky cheese lovers? This recipe is for stuffed artichokes for the cheesy lover. I used a Gorgonzola cheese in this recipe, but you can substitute for a milder cheese, if you prefer. I adore Gorgonzola, so I think it makes a perfect pair with the fresh herbs. The Gorgonzola melts inside this artichoke, no need for a dip, it’s right inside!

This recipe is for stuffed artichokes for the cheesy lover. The Gorgonzola cheese is stuffed inside the chokes, and baked with fresh herbs, no need for a dip. The dip is right inside. So much flavor, and deliciousness.

Ingredients
- 2 medium sized artichokes
- 1 lemon
- 5 oz. Gorgonzola cheese
- 1 tbsp heavy cream
- 1 tbsp fresh parsley
- 1 tbsp fresh thyme
- 1 garlic clove,minced
- 3 tbsp crushed cheese whisps
- 1-2 tbsp olive oil
Instructions
- Bring large pot of salted water to a boil.
- Using sharp knife, slice 1-2" off artichoke top and trim stem off bottom so it sits flat on a plate. With kitchen scissors or sharp knife, trim each artichoke leaf removing thorn on each tip.
- Place artichokes in boiling water. Add juice from 1 lemon in pot. Cover and boil for 30 minutes. Drain artichokes and let cool.
- Meanwhile, mix cheese, cream, herbs and garlic in bowl.
- Preheat oven to 400 degrees. With a spoon, scoop out the center of the artichoke, leaving a hole for stuffing.
- Stuff each artichoke with cheese filling, and sprinkle with crushed cheese crisps. Drizzle with olive oil.
- Bake for 20 minutes, enjoy!
