Artichokes for the Cheesy Lover
This recipe is for stuffed artichokes for the cheesy lover. The Gorgonzola cheese is stuffed inside the chokes, and baked with fresh herbs, no need for a dip. The dip is right inside. So much flavor, and deliciousness.

- 2 medium sized artichokes
- 1 lemon
- 5 oz. Gorgonzola cheese
- 1 tbsp heavy cream
- 1 tbsp fresh parsley
- 1 tbsp fresh thyme
- 1 garlic clove,minced
- 3 tbsp crushed cheese whisps
- 1-2 tbsp olive oil
Bring large pot of salted water to a boil.
Using sharp knife, slice 1-2" off artichoke top and trim stem off bottom so it sits flat on a plate. With kitchen scissors or sharp knife, trim each artichoke leaf removing thorn on each tip.
Place artichokes in boiling water. Add juice from 1 lemon in pot. Cover and boil for 30 minutes. Drain artichokes and let cool.
Meanwhile, mix cheese, cream, herbs and garlic in bowl.
Preheat oven to 400 degrees. With a spoon, scoop out the center of the artichoke, leaving a hole for stuffing.
Stuff each artichoke with cheese filling, and sprinkle with crushed cheese crisps. Drizzle with olive oil.
Bake for 20 minutes, enjoy!
