Preheat oven to 425°
Place 1-1/2 C mozzarella cheese and cream cheese in microwave safe bowl and melt for 30 seconds, stir, another 30 seconds, stir. Add egg and almond flour, mix thoroughly.
Place parchment paper on cookie sheet and place dough on parchment paper.
Oil fingers, and pat down the dough flat onto the cookie sheet until it is a uniform thickness.
Sprinkle dough with fresh minced garlic, Italian seasoning, 1/4 C Parmesan cheese and 1/4 C mozzarella cheese. Bake for 5-6 minutes.
Top with remaining 1/4 C Parmesan cheese and 1/4 C mozzarella cheese and bake another 5 minutes until edges are brown and cheese is bubbling.
