In a large frying pan, over medium heat, add meat and stir well.. Add salt, paprika, cumin, garlic powder, onion powder and chiipotle peppers. Cook until browned.
Push the meat to the side of the frying pan (or remove if pan is too small ), add the sliced bell peppers and onions and cook until softened. Remove from heat.
In a bowl, add cooked cauliflower that has all water drained and squeezed out using a cloth or paper towel. Add juice of 1 lime and cilantro, a pinch of salt and mix well.
To each meal prep bowl, add 1/4 of rice mixture, 1/4 of the meat, 1/4 of peppers and onions, 1/4 beans. When ready to eat, top with sliced avocado and jalapeno on top. Sprinkle of cilantro over each bowl.
