Cold Low Carb Noodle Salad

Episode 3 of my hearty salads series. This cold low carb noodle salad is packed full of protein and fiber and with a touch of spicy heat. Topped with a peanut sesame ginger dressing. I have to say I enjoy it best the next day after it sits and lets the flavors marinate.

Ingredients
  

  • 1 12 oz Palmini, angel hair pasta
  • 1/2 Cabbage head, sliced thin
  • 1 Red bell pepper, julienned
  • 2 Scallions, chopped
  • 1/2 Cup Almonds, sliced thin
  • 2 cups Cooked chicken I used shredded rotisserie
  • 2 Tbsp chopped peanuts for topping
  • 2 Tbsp Cilantro, chopped for topping
  • PEANUT SESAME GINGER DRESSING
  • 3 Tbsp Good quality peanut butter
  • 2 Tbsp Rice vinegar
  • 2 Tbsp Honey
  • 1 Tbsp Sesame oil
  • 2 Tbsp Soy sauce or liquid aminos
  • 1 Tbsp Fresh ginger, minced
  • 2 Garlic cloves, minced
  • 2 Tbsp Water, more if needed

Instructions
 

  • Rinse the palmini noodles in a strainer, and set aside to drain.
  • Chop half a head of cabbage into thin strips. Slice green onions and slice julienne strips out of the bellpepper.
  • For the dressing: To a small bowl, add peanut butter, rice vinegar, honey, sesame oil, soy sauce, ginger, garlic cloves and water. If consistency is too thick, add more water to your create your own desired consistency. Mix well.
  • In a large bowl, add cabbage and layer cabbage with palmini noodles, red bellpepper, green onions and chicken. Drizzle the peanut sesame ginger dressing over the top. Sprinkle with crushed peanuts, and cilantro. I added some red pepper flakes, totally optional. Enjoy!
