Heat a medium fry pan over medium heat.
Place 1/4 C shredded Mozzarella in pan and allow time for it to bubble and become melted.
Start filling cheese with desired meat and anything else you would like to fill with. You can choose to add onions, chili peppers, black olives, cilantro, etc....
Start to fold the cheese shell overlapping one side at a time.
Top your cheese shell enchilada with sour cream, fresh avocado , black olives and cilantro. Enjoy!
