Ingredients
  

  • ½ cup almond flour
  • 1 tablespoon baking powder
  • 2 ½ cups shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 2 eggs beaten
  • 1 packet active dry yeast
  • 1 tablespoon Monkfruit sugar free sweetener optional, for a touch of sweetness
  • 1 tablespoon Everything But The Bagel Seasoning for topping

These gluten free buns are made with a fathead-style dough, which means they’re not only low carb but also chewy, flavorful, and perfect for burgers. This recipe keeps carbs in check while still delivering a soft texture that holds together well with fillings.

Instructions
 

  • Preheat your oven to 375°F.
  • Grease four or six ramekins (depending on desired size) and spray with olive oil.
  • Mix your dry ingredients together: almond flour, baking powder, erythritol, and yeast. Set aside.
  • In a separate microwave-safe bowl, combine cream cheese and shredded mozzarella. Microwave in 30-second intervals, stirring each time, until completely melted and smooth.
  • Add the dry ingredients into the melted cheese mixture and stir well.

  • Add in the beaten eggs and continue mixing. It may be easier to use your hands to form the dough completely.
  • Divide the dough into your greased ramekins and press gently to shape.
  • Sprinkle the tops with Everything But The Bagel Seasoning.
  • Bake for 15 minutes if making four large buns. If you stretch the dough into six smaller buns, reduce the bake time slightly and watch until golden brown on top.
  • Cool, slice, and fill with your favorite burger patty, fresh veggies, keto-friendly condiments, and enjoy!
