Tasty Taco Soup for the Low Carber

This tasty taco soup for the low carber has just the right amount of spice. You can choose to use 1 to 3 lbs of meat depending on how chunky you desire your soup. This taco seasoning can be jarred and used for other recipes that call for taco seasoning. A much cleaner version than those pre packaged seasonings with added sugar, MSG, sodium and other ingredients that are no bueno.

Ingredients

  • 1 Tbsp avocado or olive oil
  • 1-3 lbs. ground turkey or beef
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp cumin
  • 1/2 onion, chopped
  • 1 recipe taco seasoning SEE BELOW
  • 4 Cups chicken or beef broth
  • 14 oz. can of diced roasted tomatoes
  • 3/4 Cup heavy cream
  • TACO SEASONING
  • 1-1/2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • OPTIONAL TOPPINGS
  • Avocado, jalapeno, cheese, cilantro, sour cream

Instructions

  • Add all taco seasoning in a bowl, mix well and set aside.
  • In a Dutch oven or stock pot, over medium heat, add oil and saute onions for a few minutes until translucent. Then add meat, salt, pepper and cumin to taste. Cook till browned, stirring constantly. NOTE: This can be placed in a slow cooker or instapot.
  • Add broth, tomatoes, taco seasoning and bring to a boil. Reduce to a simmer and add cream.
  • Serve garnished with avocado, jalapeno, cilantro or sour cream.
