The Darn Good Salad
This is my spin on the very popular Kardashian salad. A few changes, however the darn good salad is just that. It's a great option for any meal or to bring to your next party.

- 3 bunches Romaine hearts
- 1 can White beans, drained Omit if Keto
- 1 cucumber, chopped
- 1 avocado, sliced
- 4 Sundried tomatoes, chopped finely
- 1/4 cup Fresh Mozzarella, diced
- 12-14 slices Salami
- CREAMY DIJON DRESSING
- 2 Tbsp Olive oil
- 1 Tbsp Red wine vinegar
- 1 Tbsp Dijon mustard
- 2 Tbsp Grated parmesan cheese
- salt and pepper to taste.
Rinse and drain 3 stalks of hearts of Romaine lettuce. Chop into bite size pieces.
Pat dry lettuce and place in a large bowl.
Chop cucumber, avocado, salami, sun dried tomatoes and mozarella. Layer each ingredient including white beans over the top of your chopped bed of lettuce.
In a separate bowl add all dressing ingredients and mix well. Pour over salad and enjoy!
