Slice three chicken breasts in half, creating six pieces. Generally season both sides of chicken with salt, pepper and paprika.
Heat a large frying pan over medium heat with 2 Tbsp oil.
Cook chicken 5 minutes on each side. Push chicken to edge of pan.
Add shallots (or onions), prosciutto, mushrooms, and garlic. Saute till softened.
Add wine (or broth). Then add in block of cheese and cook until completely melted. Constantly stirring. Add spinach to pan and stir till wilted. Turn off heat. Enjoy!
