Ingredients
- 1/4 C Mozzarella cheese, shredded
- 1/4 C Chicken, beef, pork, sausage, or fish any meat or fish of your choice
- 1 T Salsa
- 1/2 Avocado, sliced
- 1 T Sour cream for topping *optional
- Cilantro for garnish
Instructions
- Heat a medium fry pan over medium heat.
- Place 1/4 C shredded Mozzarella in pan and allow time for it to bubble and become melted.

- Start filling cheese with desired meat and anything else you would like to fill with. You can choose to add onions, chili peppers, black olives, cilantro, etc….

- Start to fold the cheese shell overlapping one side at a time.

- Top your cheese shell enchilada with sour cream, fresh avocado , black olives and cilantro. Enjoy!
