Cheesy garlic low carb keto flatbread
Ingredients
- 1.5 C Mozzarella cheese, shredded
- 2 T Cream cheese
- 1 egg
- 3/4 C Almond flour
- 1-2 cloves garlic, minced
- 1/2 C Parmesan cheese
- 1/2 C Mozzarella cheese
- 1 tsp Italian seasoning
Instructions
- Preheat oven to 425°
- Place 1-1/2 C mozzarella cheese and cream cheese in microwave safe bowl and melt for 30 seconds, stir, another 30 seconds, stir. Add egg and almond flour, mix thoroughly.
- Place parchment paper on cookie sheet and place dough on parchment paper.
- Oil fingers, and pat down the dough flat onto the cookie sheet until it is a uniform thickness.
- Sprinkle dough with fresh minced garlic, Italian seasoning, 1/4 C Parmesan cheese and 1/4 C mozzarella cheese. Bake for 5-6 minutes.
- Top with remaining 1/4 C Parmesan cheese and 1/4 C mozzarella cheese and bake another 5 minutes until edges are brown and cheese is bubbling.

Since my gringo husband is more spicy than this Latina, I added pickled jalapenos to this recipe vs. fresh. This recipe is so versatile, you can add your favorites like bacon, extra cheese, spices, why not?
Cheesy Jalapeno LOW CARB no corn cornbread muffins
Ingredients
- 2 C Almond flour
- 1-1/2 tsp baking powder
- 1/2 tsp salt
- 1-2 T Granulated sugar substitute I use Lakanto
- 2 C Shredded cheddar cheese
- 3 Eggs
- 3 T Heavy whipping cream
- 1/2 C Sour cream
- 1/4 C Melted butter
- 1-2 T Chopped jalapenos, fresh or pickled *optional
Instructions
- Preheat oven to 350°. Line 12 muffin tins with liners.
- Mix Flour, Baking Powder, Salt, Sugar substitute, cheese together.
- Add rest of ingredients and mix well.
- Pour into muffin tins, filling half way. Bake at 350 for 20 minutes.
