This star spangled caprese appetizer is an easy. healthy summer appetizer made with ripe tomatoes, blueberries, basil, olive oil and balsamic glaze. Packed with protein, fresh ingredients, & Mediterranean inspired flavors. Perfect for entertaining and outdoor barbeques.

Star Spangled Caprese
Fresh mozzarella, juicy tomatoes and sweet blueberries come together in this festive red, white and blue appetizer. Finished with star shaped cheese cutouts with a drizzle of olive oil, balsamic glaze & fresh basil.
Equipment
- 1 star cookie cutter
Ingredients
- 16 oz. Fresh Mozzarella
- 3 tomatoes, sliced
- 1/2 cup Fresh blueberries
- 1 Tbsp Fresh basil, chopped
- 1 Tbsp Olive oil
- 1 Tbsp Balsamic glaze
- Salt and pepper to taste
Instructions
- Slice mozzarella and tomatoes to even thickness.
- Using a knife or star shaped cookie cutter, cut out three small stars from mozzarella. Set aside.
- On a rectangle tray or cutting board, start layering tomato slices first 4-5 slices on top right corner, leaving left side open for blueberries & stars.
- Start layering mozzarella slices on the second row using 6-7 slices. Repeat so you alternate two rows of tomatoes and two rows of mozzarella. Top row of tomatoes being the shortest.
- Add the blueberries to the left corner, stars on top of blueberries.
- Salt and pepper the tray. Drizzle with oive oil and balsamic glaze. Sprinkle with chopped basil.
