This Harvest sheet pan meal prep is the perfect healthy fall lunch or dinner. Packed with protein, fiber and healthy fats. Quick, easy meal for a busy week night. Using one pan for easy clean up, Divide into four meal prep containers for four meals throughout the week.
Ingredients
- 8 chicken apple sausages, sliced
- 2 apples, cut into 1/2" squares
- 1 bag of Brussel sprouts, halved
- 2 sweet potatoes, peeled and cut into 1/2" slices
- 1 can chickpeas, drained
- 2 Tbsp Fresh rosemary, diced
- 1/4 cup Pepitas (pumpkin seeds)
- 1/4 cup Pomegranate seeds
- 2-4 Tbsp sugar free maple syrup
- 1 tsp garlic salt
- 1 tsp black pepper
- 1 tsp chili powder
- 2-4 Tbsp olive oil
Instructions
- Preheat oven to 400F. Line baking sheet with sausages, apples, sprouts, potatoes, and chickpeas.
- Season well with salt, pepper, and chili powder.
- Add chopped rosemary on top. Drizzle with olive oil and toss well.
- Bake 25 minutes.
- Remove from the oven. Top with pepitas and pomegranate seeds. Toss well.
- Drizzle with maple syrup, and divide into four meal prep containers for the week.
